Quercetin
Quercetin is a red pigment, a flavonoid, widely found in plants. It has many beneficial properties and it is partly responsible for the health benefits of eating fruit and vegetables.

It has anti-cancer, anti-allergy and anti-inflammatory properties and is an anti-oxidant, scavenging particles in the body called free radicals which can damage cell membranes . Quercetin is also thought to protect LDL (“bad”) cholesterol from oxidation, which is believed to lead to heart disease. Therefore, quercetin is often taken as a food supplement.

Prickly pear fruits are edible but should be handled with care....
